Egg “Muffins”


These are delicious and are great for on the go! Simple to make and the possibilities for the flavors are endless. Take the “base” and include any ingredient’s you’d like!


What you need;
“The Base”
8 large eggs
1/4 c milk
Salt & Pepper

Flavor suggestions;
Spinach, bacon, cheddar (pictured)
Mushroom, onion, ham
Green pepper, onion, mushroom
Spinach, mushroom, sausage
*The combinations are endless*

How to make;
Beat eggs, salt and pepper to taste, stir in milk. Chop your desired “add-ins” and stir in with eggs. Veggies I leave raw, any meats I pre-cook and chop or crumble. I suggest a 1/4 of a cup per ingredient. Stir in “add-ins” and pour into a greased muffin tin. Fill about 2/3 and bake at 375 for 20 min. Makes 12 “muffins”.

These are perfect for busy mornings. I portion them out for the week and heat for 30 sec in the microwave. Eat like a muffin or with a fork. They are really good with a little hot sauce or fresh salsa on top. Low carb/High Protein.

  1. I made these, can’t wait to eat for breakfast tomorrow. I put canadian bacon,spinach,mushroom in my 6 and I put turkey sausage, spinach, mushroom in Tim’s 6 with sharp cheddar in all. Very simple to make.
