I’ve had some requests for more low carb breakfast ideas, so here ya go. These are so easy and so yummy!
What you need;
12 pieces of ham
12 large eggs
Salt & pepper
How to make;
Spray your muffin tin with cooking spray and put a piece of ham in each cup so it covers the bottom and up the sides. Crack an egg in the middle of each piece of ham. Season each cup with salt and pepper to your liking. Bake at 400 for 15 minutes. I topped with scallions and served with bacon (yes more meat).
Suggestions; If you don’t like ham then try turkey. If you prefer your eggs scrambled then use 8 eggs and 1/4 cup of milk, whisk with salt and pepper and pour into each cup. Baking time should be about the same.
