You can stuff a mushroom with pretty much anything. I happen to love mushrooms and they can be very filling and “meaty”, especially portabella’s. Take a mushroom (really any kind) and cut out the stem and fill it with anything you’d like. Here’s my favorite combination.
What you need;
12 baby bella mushrooms
8 oz cream cheese, softened
1/4 cup diced bell pepper (any color, I used orange)
1/4 cup diced red onion
About 1 cup cooked and crumbled sausage
1/4 cup shredded cheddar cheese
How to make;
Remove the stem from each mushroom and a little of the inside. Mix all of the filling ingredients until combined. Stuff each mushroom with filling (you want it really full). Bake on a baking tray at 400 for 15 minutes.
