I got this recipe from Pinterest, but I tweaked it a little as I usually do and we were all very happy with the way it turned out. Cade even loved it and it’s going to be in our summer grilling rotation! It’s simple, cheap and so good!
What you need;
- 5 lb package of chicken thighs
- 1 cup of coconut milk
- 3/4 cup soy sauce
- 3/4 cup water
- 1/2 cup packed brown sugar
- 1 tsp minced garlic
How to make;
Remove skin and visible fat from the chicken thighs and place them in a covered container. Mix the coconut milk, soy sauce, water, brown sugar and garlic together. Pour over the chicken and let it marinate for 8-12 hours or overnight. Grill 7-10 minutes on each side or until chicken is cooked through.
I love grilled fruit so I sliced up some pineapple, sprinkled on some brown sugar and grilled it right along with the chicken. Serve with a salad and you have yourself a delicious and easy summer dinner!
