The BEST Carrot Cake


Wow, it’s been almost 2 weeks since my last post! Where has the time gone? Oh wait, I think I know what happened….being pregnant and having a very active two year happened! Anyway, in my few minutes of spare time I decided to bake a carrot cake. I’ve had this recipe from The Pioneer Woman lying around for a few weeks now, but haven’t had the time (or energy) to make it. As usual, I changed up the recipe to make it more suitable for my family. Omit the nuts because the hubby doesn’t like them, reduce the sugar and enhance the flavor. Hope you enjoy this recipe as much as my family did!

What you need;

For the cake

  • 1 1/2 cups sugar
  • 1 cup veg. oil
  • 4 eggs
  • 2 cups flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 2 cups grated carrots
  • 1/4 cup raisins

For the icing

  • 1 stick of butter, softened
  • 8oz cream cheese, softened
  • 3 cups powdered sugar
  • 2 tsp vanilla extract

How to make;

Mix the sugar, oil, eggs & vanilla until combined. In a separate bowl, sift together the flour, salt, baking powder, baking soda and cinnamon. Slowly add dry ingredients to wet mixture. Add grated carrots and raisins and mix well. Pour into a greased and floured bundt pan and bake at 350 for 50 minutes. Cool completely before icing. Cream together all the ingredients to make the icing until well combined and I dump the icing over the cake and let it fall down the sides. I thought it looked pretty like that but I wanted equal icing for every bite so I did end up spreading it around evenly. ENJOY!
