This recipe has been circulating on Pinterest for months. I’ve seen it called a few different names but it’s always the same 5 ingredients. I pinned it with the intention of trying it soon, but weeks went by before I remembered this dish. Friends of ours had a new baby and I thought this would be perfect to take to them for dinner. I made two dishes, one for us and one for them. This recipe is so simple, cheap and delicious! The chicken is so moist and full of flavor. You put everything in the same dish and bake, you can’t mess it up!
What you need;
4 chicken breast
About 1.5 pounds of cubed red potatoes
Fresh or frozen green beans, about 14 oz
1 pkt of Italian dressing seasoning
1 stick of butter, cubed
How to make;
Lay chicken down the middle of a 9×13 baking dish. Lay potatoes and green beans along side of the chicken. Season with salt and pepper (optional). Sprinkle Italian seasoning over everything and top with cubes of butter. Cover with foil and bake at 350 for 1 hour.
This is a full meal in itself or serve with hot rolls. This recipe feeds four for about $10.00! Make a pan for yourself and one for a friend!

sounds good but that’s a lot of butter- what could you sub for that? also, isn’t it dangerous to put the veggies next to raw chicken- i would be worried about salmonella contamination? any thoughts on that?

Hi Mary, you could reduce the amount of butter to your liking. It keeps the chicken moist and adds flavor. An oil or chicken broth could be substituted. Because everything is being cooked, there’s not a risk for contamination.

Could you do this with asparagus?

Absolutely! I would check the asparagus about half way through cooking though. Asparagus tends to get soft quickly. If it’s done before everything else just scoop it out and let the rest finish cooking.

Do you used thawed chicken? 1 hour seems like a long time if it’s thawed. But definatly going to try this!!! Sounds delicious 🙂

Yes thawed chicken. Make sure you cover the dish with foil while baking and that’s what ensures that the chicken won’t dry out in the long cooking time. The potatoes definitely need the full hour to fully cook.

I just made this dish the other night. I’m a simple kind of person. I loved it, I did add an extra 10 minutes to my time and my potatoes were still undercooked and I cut them pretty small but I didn’t mind they were still super yummy. This was also the first time I bought Fresh Green beans (I don’t think i’ll ever buy canned again)

What does the butter do for the dish? Could you substitute with chicken or vegetable stock?

The butter adds flavor and helps to keep everything moist. You could try substituting a stock. Let me know how it turns out if you do try that.

We are a Puerto Rican family. I get tired of the same dishes: rice, beans(any color) and baked meat or stewed meat…I am totally going to cook this recipe for my family! What side this you cook with this?

Hi Amber, thanks for your comment. I have never tried baking two pans of this dish together, but I’m sure you could. It just might need to bake a little longer. I often bake cookies two trays at a time and I have to bake them a few minutes longer than when I bake one sheet at a time. The potatoes take the longest so once those are cooked, everything else should be done too.

Omg I finally made this. It’s perfect! I saw a comment about the potatoes not being cooked all the way but I didn’t have that problem. The juices from the chicken cooked everything perfectly. I had to use a bigger baking dish and only used 3 chicken breasts because they were so big. But it was still great.

Hi Amber, thanks for your comment. I do think you could do this with pork chops, however the cooking time might be different depending on the thickness of the pork chops. You might have to take them out and let the potatoes finish cooking. Those need the full hour.

I just cut up a stick of butter and put the patties all over. I also sprinkled Parmesan cheese on top too.. So easy & good

Hi Katie, thanks for your comment. I haven’t tried ranch seasoning, but I think it would be good. The dry ranch packets are very powerful in flavor so you might not need the whole packet. If you do try it let me know how it turns out.

What would you recommend other then the Italian dressing seasoning? My husband doesn’t like it and i’m not a very creative cook.

Hi Adrienne, another follower suggested ranch seasoning. If you try ranch I would suggest only using half a packet. Ranch is a very strong flavor. If you use Mrs. Dash seasoning, any of those flavors would be good or lemon pepper seasoning.

Hi Amanda, you do not have to use the butter. It’s for flavor and to keep everything moist. You could use a little chicken stock instead or a light drizzle of oil. I do not have an estimate of calories. I usually plug my ingredients into the My Fitness Pal website when I need a calorie count. Hope that helps!

Hi Chrissy, thanks for the comment. Italian dressing seasoning is a dry mix in the salad dressing isle. It’s normally mixed with oil to make a dressing, but in this case, I used it just for flavor and seasoning.

Yes, you could use chicken legs. The foil does keep the chicken moist and helps the veggies cook.

Hi Addi, thanks for your comment. I would suggest using a dry seasoning like a lemon pepper over an Italian dressing. The Italian dressing may make the veggies soggy.

How would you recommend freezing this?
I’d like to gift it for new moms but give them the option of putting it in the freezer rather than having to make it right away.
Also if I use frozen green beans do I add them frozen or thawed?

Hi Alyssa, thanks for your comment. If you plan on freezing the dish, I would freeze everything separate in freezer bags. Then thaw together and place in the dish to bake with the seasoning. Everything should be defrosted before baking.

This dish is amazing! Made it tonight, super fast and easy and my boyfriend and I both loved it. Previous comments state concerns with the potatoes not fully cooking, I did not have that concern at all and cooked it for exactly 1 hour, and only quartered them. Maybe make sure your foil is on tight? I used carrots instead of green beans only because the store’s didn’t look good today and I prefer not to use frozen. Carrots were awesome, but those I do recommed to not do too big of chunks or they may not cook completely through. I personally did not have an issue with the amt of butter as once it melts it is on the bottom of the pan, it did add great flavor and kept moisture in the dish very well. Overall, great dish and will keep this on my list!
