Slow Cooker Spaghetti Squash & Meatballs – Low Carb


The inspiration from this recipe comes from Pinterest…..I saw a pin with spaghetti squash in a slow cooker with sauce and thought I’d give it a try. My first attempt was good enough to try the recipe again, but per hubby’s request I’ve added MEAT! Meatballs to be exact, just three simple ingredients if you’re lucky like me and can find freshly made Italian meatballs at your grocery store (frozen would work too) or make it a little more complicated and make your own, whichever route you go, this is a very satisfying dinner that cooks itself all thanks to my best friend in the kitchen, the slow cooker! Oh and it’s LOW CARB, but if you aren’t watching your carbs and just want a lighter “spaghetti” dinner, then give this a try, pair it with a green salad and maybe even some garlic cheese bread and dinner is done! How simple is that?!

Here’s the recipe……

What you need;

1 medium to large size spaghetti squash (I forgot to weigh the one I got, sorry)
1-2 jars of your favorite spaghetti sauce or homemade if you feel like being an overachiever 🙂 (I like Bertolli’s Organic sauces)
12 Italian Meatballs

How to make;

Cut the spaghetti squash in half and scoop out the seeds, place each side cut side down in the slow cooker. Pour your desired amount of spaghetti sauce around the squash (I used 1 1/2 jars of sauce, we like it saucy!). Place the meatballs down in the sauce. Cook on low for 5-6 hours until the squash is soft when you poke it. Remove the squash and let it cool before you start to scrape the inside. Give the sauce in the slow cooker a good stir, possibly add some fresh basil, parsley, or oregano (unfortunately I didn’t have any on hand). Once the squash is cool enough to handle, scrape all the inside into a bowl (looks like spaghetti). Either ladle the sauce & meatballs over a helping of spaghetti squash, or mix all the spaghetti squash into the sauce and ENJOY!

I forgot to take an after picture, but here’s what it looks like as it’s cooking in the slow cooker. After it’s cooked, well it looks like spaghetti & meatballs 🙂 Don’t forget to top with parmesan cheese!
