Bacon Wrapped Jalepeno Popper Stuffed Chicken


Well that title is a mouthful…..couldn’t think of any other way to word it. I wanted everyone to know about all the deliciousness in this recipe from just reading the title. A mouthful of goodness is what you will enjoy when eating this chicken. Low carb but packed with flavor. You can make it as spicy as you would like. The recipe below is for a mild heat, increase or decrease to your liking.


What you need;
4 chicken breast
4oz cream cheese, softened
1/4 cup shredded cheddar cheese
1 tbls diced jalepeno
8 slices of bacon
Salt & Pepper

How to make;
Pound out the chicken breast until they are an even thickness. Putting them in a zip top bag keeps the mess off your countertop. Season the chicken with salt and pepper. Mix the cream cheese with the shredded cheese and jalepeno. Put 1/4 of the cream cheese filling onto each piece of chicken. Roll each piece of chicken into a log. Wrap each piece of chicken with 2 pieces of bacon. Place the chicken on a cooling rack on top of a baking sheet. This helps crisp up the bacon and lets the fat drip away.

Bake at 400 for 30 minutes or until chicken is cooked through. Let the chicken rest at least 5 minutes before serving to let the filling cool slightly. ENJOY!!!
