Carrot Zucchini Cupcakes

Hi ya’ll! I made these cupcakes with the last zucchini I picked from our garden and I’m just now getting around to sharing the recipe with you. Now I want them again, guess I’m going to have to buy a zucchini to make them this time. My husband raved over these cupcakes, said they were some of the best he ever had. I have to agree, I didn’t even think they needed the frosting, however, I didn’t complain about the frosting either! Either way they are moist, full of flavor and simply delicious! Not a fan of cream cheese frosting, well then skip it and eat them like a muffin.

Carrot Zucchini Cupcakes

What you need;

1 1/2 c flour

3/4 c granulated sugar

1/4 c honey

1 tsp cinnamon

1/4 tsp nutmeg

1/2 tsp salt

1/2 tsp baking soda

1/2 c veg. oil

2 eggs

1 tsp vanilla extract

1 c shredded carrot

1 c shredded zucchini

For the frosting – 4 oz cream cheese, softened. 2 c powdered sugar. 1 tsp vanilla extract. Splash of milk if it’s too thick.

 

How to make;

Preheat the oven to 350. Line your muffin tin with paper cups or spray with cooking spray. Combine the dry ingredients (flour, sugar, cinnamon, nutmeg, salt, baking soda) together. In a separate bowl combine the wet ingredients (honey, oil, eggs, vanilla extract) together. Stir the dry mixture into the wet mixture until incorporated. Fold in the shredded carrots and zucchini. Fill the cups about 3/4 of the way full. Bake for 20 minutes or until a toothpick comes out clean. Let cool completely. For the frosting, whip together with your mixer the cream cheese, powdered sugar and vanilla. If the consistency is too thick, add a splash of milk. Immediately frost the cooled cupcakes and top with a glazed pecan! Enjoy!
