Spicy Spinach Queso Dip

Is everyone ready for the big game tomorrow? I’m not a football fan, but I am a fan of the party food! I tested a new dip today, and it’s blog worthy, yay! If you’re heading to a party tomorrow, whip this baby up and keep in warm in a crock pot. I bet it will be gone before half time!

Spicy Spinach Queso

What you need;
14 Oz Velveeta Cheese
4 Oz Cream Cheese
1 can Mexican Cilantro Lime Rotel, undrained
1 cup frozen spinach, thawed, squeezed dry in a towel
2 Tbls diced jalepeno (I used pickled)
1/2 Tsp ground cumin
1/8 Tsp ground cayenne pepper (omit if you only like mild spice)

How to make;
Cube Velveeta and cream cheese and put in sauce pan over medium-low heat. Add the can of Rotel and stir until cheese is melted. Add in the spinach, make sure the water has been squeezed out. Add the diced jalepeno and spices. Mix well and transfer to a crock pot to keep warm.  Serve with tortilla chips and ENJOY!
