Hi ya’ll! I made these cupcakes with the last zucchini I picked from our garden and I’m just now getting around to sharing the recipe with you. Now I want them again, guess I’m going to have to buy a zucchini to make them this time. My husband raved over these cupcakes, said they were some of the best he ever had. I have to agree, I didn’t even think they needed the frosting, however, I didn’t complain about the frosting either! Either way they are moist, full of flavor and simply delicious! Not a fan of cream cheese frosting, well then skip it and eat them like a muffin.
