Zucchini Oatmeal Muffins



I love zucchini bread, but I like the convenience of a muffin. I found a recipe for a zucchini bread with oats in it and decided to remix it, reduce the sugar and make it into muffins. My idea sounded pretty healthy and they actually turned out to be very good. Slathered with butter and drizzled with honey makes them even more divine. They are a dense but moist muffin and this recipe makes 12 muffins if you fill the cups 3/4 full. They dont rise much.

What you need;
1 1/2 cups flour
1 cup old fashioned oats
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 cup packed brown sugar
1/4 cup honey
1/4 cup vegetable oil
1 tsp cinnamon
2 large eggs
1 tsp vanilla extract
2 cups shredded zucchini

How to make;
Mix all dry ingredients together, set aside. Mix all wet ingredients together in a separate bowl, fold in zucchini. Make a well in your dry bowl and pour the wet into the dry. Fold the wet into the dry until incorporated. Fill muffin cups 3/4 full. Bake at 350 for 25 minutes.

  1. Just sitting down now having one of your yummy muffins with a cup of tea while my youngest naps. Bliss!! I followed your recipe pretty much exactly except my son is anaphylactic to eggs so I used an egg replacer. They are super moist and I love the oatmeal in them. Its zucchini season here and i just grated 10 cups from a large zucchini and used this recipe for some and froze the rest. I will def be making these again with my other 8 cups!! Thanks for sharing


  2. Thank you for this recipe it was delicious and moist! Since I am vegan I had to adjust recipe using flaxmeal egg replacement and also found it fun to add different things such as 2 tbs of hempseeds, and replaced honey with brown rice syrup and will add some nuts next time. Healthy way to start the morning with a green drink and muffin! Looking forward to the oatmeal blueberry recipe 🙂


  3. I tried this recipe and used paper muffin liners. Unfortunately I found that half the muffin stuck to the wrapper! What a shame because the muffins (what I can manage to get off the wrapper) are delicious. Luckily I did half the batter in a Pyrex baking dish and that turned out perfect! Delicious and moist and not too sweet! I will definitely use this recipe again but would stick to my Pyrex baking dish and do more of a sheet cake next time.

  6. I’m looking forward to making these for a pot luck. I have lots of blueberries in my fridge that I need to use..do you think they would ruin the recipe if I added them?


    • Hi Brianna, thanks for your comment! I don’t think it will ruin the recipe at all. I think it will add more flavor. I have a Blueberry Oatmeal Muffin recipe too that you might want to look at!


  7. I just made these mine were a little dry , I used coconut oil & egg beaters instead .I also added walnuts, chocolate chips & blueberries (for the kids ) but they were still good!! Taking some of them for breakfast tomorrow!


    • Thanks for your comment! The more liquid your shredded zucchini gives off, the more moist the muffins will be. I have had a dry batch as well.   9. I was looking for a zucchini muffin recipe that used oatmeal (not oatmeal flour). I found your recipe! I had 2 cups of flour left in my bin. I didn’t want to leave 1/2 cup of flour in my bin so I only used 1/2 cup of oatmeal. This recipe is GREAT! I will definitely make this again. Thanks so much!!!


  10. This is one of the best recipes I’ve made! I make a batch every other week and put them in my kids’ Lunchboxes. Very nutritious and delicious:) If I’m running low on honey, I substitute half agave nectar. I also sub half oat flour with half white flour. Totally worth every step along the way!!!


  11. When adding 2 bananas, how much? 1 cup?
    Can I substitiute 2 bananas for the 1/2 c brown sugar?
    What flour did you use? AP?
